salad experiments

I’ve been on a salad kick recently and I’ve been trying fun new combinations to keep them interesting.

My new go-to: lettuce, tomato, peppers [orange, red, and yellow], cucumber, carrots, walnuts, feta, lentils and/or corn and/or chickpeas, hard-boiled eggs, and balsamic vinaigrette.

Other ideas: unique spins on chef salad, caprese salad, taco salad, & 7 bean salad

Anddd use of interesting ingredients: black olives, roasted red peppers [thank you to Sarah for this idea!], sprouts, avocado, toasted almonds, and- if I’m feeling really crazy- fruit
