lunchbox meal: cleaning out my cupboards

Since I’m moving this week, I don’t want to stock up on groceries or spend tons of time making elaborate recipes. So this week’s meals are focused on using up the things in my cabinets in an easy, efficient but still healthy way.

Today’s lunch:

  • Trader Joe’s roasted red pepper tomato soup combined with their Chimichurri Rice
  • Homemade walnut dill tuna salad {based on this recipe; added a bit of yellow mustard}
  • Fully cooked shelled edamame {steamed with sea salt}
  • A cheese stick
Filling, random, fast, and delicious!
