tofu masala + tip

I read on The Kitchn recently that firm tofu can easily be frozen and then used in dishes. So I pressed a cube of tofu, chopped it, marinated it in gluten-free soy sauce + garlic + olive oil + rice vinegar, popped it into a Ziploc bag, and froze it.

The other day, I broke out the tofu, defrosted it, and sauteed it with onions and peppers. I poured in leftover Trader Joe’s Masala Simmer Sauce, grabbed a Tupperware, and went to rinse out the masala jar.

Then I paused and had an “aha!” moment {this is a super exciting story, huh? Haha}. Why not throw the cooked tofu back into the masala jar? I’d have fewer things to wash and the tofu would soak up the last drops of the delicious sauce. So that’s how I ended up with a Meal in a Jar {sound familiar?}!

Not just a hat rack, folks. Truly inspired.
